I created a test invoice and when I received it had todays date 2/1/2007 and then it said DUE on 01/20/2001, how do I fix this? Something must be wrong somewhere in the code and I can't seem to find where to setup a due date.

Try again with correct format.The due data of this invoice. Please insert in yyyy-mm-dd date format.
